Today I slept through my alarm but still made it to the gym, just a little late. I only use the little beep that my watch makes instead of a full blown phone alarm to try and not wake up my wife at 3:30am LOL. So sometimes I miss it, I’m pretty well accustomed but not every single time. Got home and something told me to knock out some stuff for work so I did that while the kids slept.
Even though I reminded her last night and this morning, my wife forgot her lunch. So James and I hopped back in the truck and drove it over to her. She only works about 9 minutes away so it’s not a big deal at all. When he went down for a nap after a few hours clocked in for work, my plan was to try and burn some of the brush from the back woods line that I’m cleaning up. It was a little too windy to really get a massive fire going so I kept it small and told myself I’ll do this for an hour start to finish. Ended up going really well so I burnt another 30 minutes worth of limbs and trees before putting the fire out.

While that was burning and part of the reason I was thinking an hour’s time was because I wanted to make baked apples. Last week Publix has bags of apples BOGO and normally my daughter loves eating them for a snack. Well of course she doesn’t want them as soon as I buy a bunch and they had started going bad. Since baked apples get soft anyway, it’s the perfect option to avoid waste. Cut off the bad spots, peeled and sliced them before tossing in a brown sugar, cornstarch, nutmeg and cinnamon mixture and baking covered at 350 for an hour. Now that’s multitasking right there. Lunch was simple, microwaved some rice and topped with 2 leftover chicken thighs that I grilled a few days ago. Carbs, protein, not a ton of fat, filling. I knew we were having a pretty vegetable forward dinner so I didn’t add any here, actually now that I think about it I don’t know if I even had anything to add.

On the way to pick up Isla from school we swung by a local farm stand that is an absolute gold mine. I highly recommend searching Facebook and your local area to find a spot like this. It’s an old-timer and his wife who have been putting out veggies for decades. Some they grow, others they source from other local farmers. The prices…so unbelievable. I’ve checked a good handful of items against Publix and it’s on average 75% cheaper at the stand. Not to mention, as fresh as you can get unless you pick it yourself. Certain times of year they even have U-Pick crops. It’s a 24/7 stand on the honor system for the cash box. I’ll take some pictures next time I’m there, I can’t speak highly enough about local veggie stands. I only had $4 cash so I grabbed 3 sweet potatoes and a gigantic grapefruit.
Vegetarian quesadillas, actually good…
Dinner was chickpea quesadillas. I drained a can of chickpeas, smashed them up pretty good, seasoned with garlic/onion/chili powder, salt and some cumin. It was pretty grainy and I had already dumped the liquid from the can so I used about 3 tablespoons of Greek yogurt to help it form into more of a paste. Smeared onto a tortilla, topped with cheese and another tortilla and cooked on my square flat pan until toasty. While I had a split second I took Greek yogurt, squeezed in half a lime worth of juice and a pinch of salt to make a little dipping sauce. The last of a store bought jar of salsa finished it off. These were pretty good and a nice alternative to just cheese quesadillas (yuck) or some more involved type of protein inside.
