Today I was starving right when I got home from the gym so I had to have a bagel and protein shake early. Isla wasn’t feeling great this morning so any plans of starting to pack for our quick trip went out the window as I was regulated to sitting and watching cartoons waiting for everyone else to wake up.
BWTB (Breakfast with the boys) – Spam…
James has been a bit of a turd at breakfast recently, mainly only wanting to eat fruit and throwing everything else on the floor. I decided to mix it up and cook some SPAM. He ate some with toast, next time I’ll only make half the amount. Still, fruit dominated and he didn’t want anything else once he saw the grapes come out. I mixed my SPAM in with egg whites and some grapes myself.
The rest of the morning before my wife got home from work was just spent wrapping up and/or following up on any work related things before the weekend. She only works until Noon on Friday’s so when she got home we got started on some packing to head about 3 hours away for a family birthday party. It doesn’t really matter if you’re staying 1 night or 10, the amount of stuff young kids need is insane. I got the coop door installed, kind of janky for now, I’ll refine it next week for a more permanent solution.
Easy, fast, cheap dinner…using up leftovers before leaving town…
Dinner consisted of using up some leftover veggies from the fridge and protein pasta. This pasta is awesome, it’s made with chickpea flour and has a good amount of protein per serving which helps out on the Macros especially since my wife doesn’t like our only leftover protein, Pork.
The prices of pasta sauce are out of hand, so a few months back I found these…
They’re $1.53 at my Publix, even cheaper at Save-A-Lot which I frequent. They taste good as is, especially for a base you can tune up if you like. Tonight I tossed in some onion/garlic powder, Italian seasoning, paprika and salt. I’ll never pay $7 for a jar of sauce again. The pasta at $3.19/box and that sauce mean the bulk majority of the meal cost $4.72 and will easily feed our family of 4…especially with some sauteed mushrooms and zucchini on the side. I’ll add the leftover pork to mine but otherwise, that’s a meal!
