Meal Plan – Pasta Salad

Ingredients
- 1 Pound Pasta Rotini, elbow, penne, or similar
- 1 Pint Cherry Tomatoes Halved
- 1/2 Count Red onion Diced
- 1 Can Olives Any variety
- 8 Ounces Cheese Block or shredded, any flavor
- 1/2 Cup Parmesan Cheese
Dressing
- 3/4 Cup Olive Oil
- 1/4 Cup Red Wine Vinegar
- 1 TBSP Italian Seasoning
- 1 TSP Salt
- 1/2 TSP Pepper
- 1/4 TSP Red Pepper Flakes
- 1/4 Cup Mayonnaise OPTIONAL – Mix with dressing for creamy version
Instructions
- Cook pasta according to Al Dente package directions – you want them Al Dente for this
- Add all the dressing ingredients to a bowl and mix well – Note, you can just use store bought Italian dressing here. Also, feel free to mix in 1/4 Cup Mayonnaise for a creamy pasta salad
- Add the cut veggies and cheese to the bowl with the dressing and combine
- Once the pasta isn't steaming anymore, toss together with the other ingredients. Cover and store in the fridge. Be sure to give it a good toss before serving
