Meal Plan – Salmon and Broccoli with Baked Potatoes

Salmon and Broccoli with Baked Potatoes

Ingredients
  

  • 2 Pounds Salmon Filet Skin on or not, personal preference
  • 2 Head Broccoli Cut into pieces
  • 4 Count Russet Potatoes
  • Salt and Pepper
  • Vegetable Seasoning (or Salt and Pepper)
  • 4 TBSP Olive Oil
  • 6 TBSP Butter Separated

Method
 

  1. Preheat the oven to 400 degrees
  2. Wash the potatoes and dry thoroughly
  3. Coat the potatoes in oil and put on a baking sheet into the preheated oven
  4. Season your salmon as desired, place on any baking dish and set aside
  5. The potatoes will take approximately 45 minutes until fork tender. At the 30 minute mark, place the salmon into the oven as well
  6. When the salmon goes in the oven, boil water and cut the broccoli into florets, boil the broccoli until tender
  7. Remove the broccoli from the boiling water when tender and toss in 2 TBSP butter and seasoning of your choice
  8. At this time, the potatoes should be fork tender and the salmon reaching an internal temperature of 145 degrees
  9. Split the potato in half and top with butter, salt/pepper, and whatever other toppings you desire. Serve alongside the salmon filets and broccoli
