Salmon and Broccoli with Baked Potatoes

Ingredients
- 2 Pounds Salmon Filet Skin on or not, personal preference
- 2 Head Broccoli Cut into pieces
- 4 Count Russet Potatoes
- Salt and Pepper
- Vegetable Seasoning (or Salt and Pepper)
- 4 TBSP Olive Oil
- 6 TBSP Butter Separated
Instructions
- Preheat the oven to 400 degrees
- Wash the potatoes and dry thoroughly
- Coat the potatoes in oil and put on a baking sheet into the preheated oven
- Season your salmon as desired, place on any baking dish and set aside
- The potatoes will take approximately 45 minutes until fork tender. At the 30 minute mark, place the salmon into the oven as well
- When the salmon goes in the oven, boil water and cut the broccoli into florets, boil the broccoli until tender
- Remove the broccoli from the boiling water when tender and toss in 2 TBSP butter and seasoning of your choice
- At this time, the potatoes should be fork tender and the salmon reaching an internal temperature of 145 degrees
- Split the potato in half and top with butter, salt/pepper, and whatever other toppings you desire. Serve alongside the salmon filets and broccoli
