Meal Plan – Salmon and Broccoli with Baked Potatoes

Salmon and Broccoli with Baked Potatoes

Ingredients
  

  • 2 Pounds Salmon Filet Skin on or not, personal preference
  • 2 Head Broccoli Cut into pieces
  • 4 Count Russet Potatoes
  • Salt and Pepper
  • Vegetable Seasoning (or Salt and Pepper)
  • 4 TBSP Olive Oil
  • 6 TBSP Butter Separated

Instructions
 

  • Preheat the oven to 400 degrees
  • Wash the potatoes and dry thoroughly
  • Coat the potatoes in oil and put on a baking sheet into the preheated oven
  • Season your salmon as desired, place on any baking dish and set aside
  • The potatoes will take approximately 45 minutes until fork tender. At the 30 minute mark, place the salmon into the oven as well
  • When the salmon goes in the oven, boil water and cut the broccoli into florets, boil the broccoli until tender
  • Remove the broccoli from the boiling water when tender and toss in 2 TBSP butter and seasoning of your choice
  • At this time, the potatoes should be fork tender and the salmon reaching an internal temperature of 145 degrees
  • Split the potato in half and top with butter, salt/pepper, and whatever other toppings you desire. Serve alongside the salmon filets and broccoli
