Meatloaf Muffins – Fun Alternative, Faster!

This easy miniature meatloaf muffin recipe is made with ground beef (or turkey) and topped with a delicious meatloaf sauce. Faster to make than traditional meatloaf and way more fun to eat. Awesome for a quick dinner party, and they reheat very well for leftovers!

Meatloaf in a Muffin Tin

MEATLOAF ITSELF:

1 ½ pounds of ground beef (or turkey), note: leaner meat works better here because the fattier cuts like 80/20 leave tons of residual fat pooled in the tins

2/3 cup panko bread crumbs (regular is fine also if that’s all you have)

½ cup diced onion (white or yellow, avoid red)

1 tablespoon barbecue sauce (any type but something brown and sweet)

1 tablespoon of yellow mustard

½ teaspoon of garlic powder

1 ½ teaspoon of chili powder

1 teaspoon of salt

½ teaspoon of black pepper

1 egg, beaten

SAUCE:

1/3 cup brown sugar

½ cup ketchup

2 teaspoons of mustard (Dijon here if you have it, if not yellow is fine)

¼ teaspoon of nutmeg (ok to omit)

Instructions:

  1. Preheat oven to 350 degrees
  2. In a large bowl combine all the meatloaf ingredients together well
  3. Divide the mixture among the 12 cups in a muffin tin, press in and pack as much as you can, put in the oven to BAKE for 15 minutes
  4. Combine all the sauce ingredients together
  5. Pull the meatloaf out of the oven and use paper towels to soak up any grease that is sitting on top
  6. Generously sauce the muffins and bake for an additional 15 minutes or until the meat is at 160 degrees Fahrenheit
  7. Remove and serve with your favorite meatloaf sides, obviously that means mashed potatoes.

Equipment

  • 2 Bowls for mixing ingredients
  • 1 12 ct Muffin Tray

Ingredients
  

SAUCE

  • 1/3 Cup Brown Sugar
  • 1/2 Cup Ketchup
  • 2 TSP Yellow Mustard Dijon if you have it, but otherwise Yellow is fine
  • 1/4 TSP Nutmeg OK to omit if you don't have it

  • 1/2 Cup Diced Onion White or yellow, avoid red
  • 1 TBSP Barbecue sauce Anything you like works here, make sure it's brown and sweet
  • 1 TBSP Yellow Mustard
  • 1/2 TSP Garlic Powder
  • 1 1/2 TSP Chili Powder
  • 1 TSP Salt
  • 1/2 TSP Black Pepper
  • 1 Count Egg, beaten

Instructions
 

  • Preheat the oven to 350 degrees
  • In a large bowl, combine all the meatloaf ingredients together well
  • Divide the mixture among the 12 cups of a muffin tin, press in and pack as much as you can
  • BAKE for 15 minutes
  • While baking, combine all the sauce ingredients together
  • Pull the meatloaf out of the oven and use paper towels to blot up grease that has pooled on top of the meat
  • Generously sauce the muffins with the sauce mixture
  • BAKE another 15 minutes until the meat is 165 degrees Farenheit
  • Remove and serve with your favorite meatloaf sides, obviously mashed potatoes!
