Sour Cream – Taco/Burrito Sauce

This is less of a recipe and more of a theory, this base can be transformed to fit anything you want. Instead of going standard, plain sour cream…boring! Use this amped up version! Totally customizable to fit your cuisine, don’t limit yourself to Mexican. The framework here can be adapted to fit Mediterranean, Southwestern and Southern foods (Tony Chacheres or Old Bay!)

The plan is simple, equal parts sour cream, mayonnaise and salsa. From there, let your imagination run wild. Stay in the Mexican lane with hot sauce or lime juice, lean more Mediterranean by going with a Verde style salsa, cumin/paprika and add fresh herbs like cilantro or parsley. Feel free to throw in zest from citrus to brighten it up. The reason for doing a blended sour cream and mayonnaise is that 1+1 doesn’t always equal 2, the sum of the parts can be greater. Sour cream adds the cooling and tangy flavor, mayonnaise that nice smooth creaminess.
