Ingredients
- 3-4 Medium Cucumbers
- 1 Pint Cherry Tomatoes
- 1/4 Count Red Onion
- 1 Cup Apple Cider Vinegar Or white, or rice vinegar
- 2 TBSP Sugar
- Salt and Pepper
Instructions
- Slice the cucumbers into discs, tomatoes in half and red onion into long slices
- Combine the sugar and vinegar and pour over the vegetables
- Cover and refrigerate for at least 2 hours, preferably overnight
- Season with Salt and Pepper to taste
