Meal Plan - Cucumber Salad

Ingredients
  

  • 3-4 Medium Cucumbers
  • 1 Pint Cherry Tomatoes
  • 1/4 Count Red Onion
  • 1 Cup Apple Cider Vinegar Or white, or rice vinegar
  • 2 TBSP Sugar
  • Salt and Pepper

Instructions
 

  • Slice the cucumbers into discs, tomatoes in half and red onion into long slices
  • Combine the sugar and vinegar and pour over the vegetables
  • Cover and refrigerate for at least 2 hours, preferably overnight
  • Season with Salt and Pepper to taste
