Meal Plan – Breakfast Burrito

Ingredients
  

  • 4 Count Flour burrito size tortillas
  • 8 Count Eggs
  • 1/2 Pound Breakfast sausage Optional
  • 1/2 Cup Breakfast potatoes or hashbrowns
  • 1 Cup Shredded cheese From the block or the bag
  • 1 Cup Greek Yogurt Non-fat for better Macros
  • 2 Count Chipotles in Adobo Or more for more heat
  • Salt and Pepper

Method
 

  1. Brown the breakfast sausage on the stove top until cooked through, set aside
  2. At the same time, cook breakfast potatoes per package directions, usually in the oven
  3. Chop the chipotles and a little of the sauce from the can into a fine paste, combine with Greek yogurt and a pinch of salt to make the burrito sauce
  4. When the potatoes, meat and sauce are ready, scramble all eggs into a frying pan, add salt and pepper to taste and cook until done
  5. Assemble the burrito by placing it on a flat surface, coating the sauce in wide swaths across the bulk of the tortilla, add sausage, potatoes, cheese, eggs in that order for the most successful assembly
  6. Start by folding the side of the burrito closest to you over all the ingredients, using your fingertips pinch and bring it back to you sealing everything in. Continue about 1/4 roll then tuck in the sides and complete the roll. If desired, you can place the rolled burrito in a dry pan over 4/10 heat and toast until the edge seals shut.
